Scrambly Chickpea Breakfast Bowl


Chickpea Scramble:

1 can of Chickpeas

1 Tsp of ground Turmeric

Pinch of Salt and Pepper

1/4 of a sliced onion

2 cloves of garlic minced

Coconut oil

Breakfast Bowl

Handful of spinach

Handful of Rocket Lettuce

Handful of parsley

Slices of cucumber

1 Sliced Avacado

Handful of cherry tomatoes halved


Chickpea Scramble - Rinse the chickpeas and add to a bowl and mash with a fork (add a dash of water if needed) Stir through the turmeric, salt and pepper.

In a pan, warm the coconut oil and gently fry the garlic and onion then add in the chickpea mash.

Cook for a further 4 or 5 minutes until its looking golden.

Breakfast Bowl - Build the bowl by adding in the leaves - then add the chickpea scramble and top with the herbs, avacado and fresh tomato.
