Superfood Salad


Ingredients


Half an inch of ginger, grated

1 small garlic clove, minced

Small bunch of parsley, finely chopped

1 carrot, grated

1 small beetroot, grated

Handful of kale, finely chopped

1 small celery stalk, sliced

¼ lemon, juiced

½ ripe avocado, cubed

¼ cup olive oil

1 teaspoon of coconut oil

Sprinkle of sea salt


Instructions


Combine all of the ingredients except for the avocado, olive oil, coconut oil, lemon juice and salt in a bowl and mix.

Next, in a blender or food processor, blend the avocado, oils, lemon juice and salt to make a creamy green dressing, and then pour this over the salad (adjusting the oil/lemon to taste)
