Ingredients
10 large lettuce leaves
1 avocado, sliced
1/2 cup almonds1
tbsp cold-pressed flax oil
1 cloves of garlic, crushed
1/4 red onion, finely diced
2 tomatoes, quartered
1/2 tsp ground cumin
Pinch of chili powder
Pinch of Himalayan salt
2 tbsp coriander, chopped
Coriander Cashew Dressing
1/2 cup cashews
1/4 cup coriander, chopped
30ml olive oil
Juice of half a fresh lime
Himalayan or rock salt & fresh black pepper to tasteI

1) NOTE: if you don’t have a high speed blender, start by soaking the nuts for at least a couple of hours before, pref overnight. If you have a powerful blender, you can use them raw. start by blending together the almonds, tomatoes, flax, spices, garlic and mostof the coriander. Blend it chunky or smooth, however you prefer (I prefer chunky)
2) Set this aside and move onto the dressing. To make this simply blend it all together(soaked nuts the same as above) until it’s smooth.
3) Now build the tacos by filling the lettuce leaves with the chunky mixture, topping with onion, avocado and a drizzle of the coriander dressing and some fresh coriander.
