INGREDIENTS
2 cups rolled oats
1 cup rolled oats, blended into flour
1 tbsp cinnamon
2 flax eggs – 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes
2 cups ripe, mashed banana
1/2 cup mix-ins of your choice: raisins, chocolate chips, nuts, etc.
INSTRUCTIONS
Preheat the oven to 350 degrees.
In a large bowl, mix the oat flour, whole oats, and cinnamon.
Add the flax eggs and mashed banana and mix until everything is thoroughly combined.
Add any mix-ins you'd like (chocolate chips, raisins, etc.), and portion about 1/4 cup of dough into 12 rounds on a nonstick or lined cookie sheet.
Bake the cookies for 15 minutes, then let them cool on the pan for at least 15 minutes.
