Raw Pad Thai


2 courgettes

1 carrot

1 yellow pepper

1 red pepper

2 spring onions

100g sugar snap peas

1 bunch of fresh coriander

1 red chilli

1 green chilli

100ml coconut milk

2 tbsp tahini

Juice of 2 limes

Large pinch of salt

1 tbsp soy sauce

2 tbsp sesame oil

3 tbsp sesame seeds


Finely slice/ribbon/spiralise the courgettes and carrot. Place in a mixing bowl.

Cut the peppers and sugar snap peas into thin strips and add to the bowl.

Finely chop the chillis and spring onions and add to the mix.

Put the coconut milk, tahini, lime juice, soy sauce, sesame oil and salt into a jam jar and give it a good shake.

Add the dressing to the mixing bowl and give everything a good mix together.

Serve and sprinkle to sesame seeds on top.
